Wedding Weekend Cooking Adventure

Whew! What a crazy weekend this was! My little sister, Brittany Wilson (well, now Hughes)got married on Saturday August 22. The reception was catered by family and friends, which means, you guessed it...I got to cook! Normally this would be pretty fun to me, but I kind of put it off until the last minute. A BIG thank you to Lee, Mom and Mike for helping me get it all done!
In all the chaos, I discovered some pretty easy starters that might help you out next time you need something for a party or get together.
The easiest thing that I made was a cheese and grape tray. I just put the grapes in the middle and one kind of cheese on each side. It sounds simple, and it was, but it looked so pretty! The family and the wedding party kept walking by and sneaking a grape or a cheese cube :) It was a big hit!
The other thing that i made was cream cheese and salsa pinwheels. We mixed together about 1/2 cup of salsa for each 8 oz of cream cheese. The cream cheese has to be REALLY REALLY soft (figured that out the hard way). Then you just spread as much or as little as you'd like onto a tortilla. Just be sure to spread it close to the middle, as it will spread to the edges when you roll it. Roll them up, and freeze for about 4 hours. Then slice into 1 inch thick slices and freeze until ready to use! DELICIOUS!

On a side note, since I discovered this tasty combo I've been mixing cream cheese and salsa and eating it with tortilla chips...its like chips and salsa only its actually filling! Plus calcium haha:)
