Chicken with Creme Sauce

When I was younger Mamaw made this delicious pasta with white sauce and chicken and I loved it! But she wouldn't make it very often because it was kind of time consuming to make. I've made it once in adulthood and she was right! It was a pain in the butt! I accidentally made a really easy cheap version last night with no intentions of replicating it and it was awesome if I do say so myself! I would show you a picture but Mom, Lee and my brother Trey ate it all! Well..I guess I helped a little..

So the way this whole recipe started was that I didn't feel like cooking, which is rare. I didn't know what to make so I started looking for something easy to use with chicken and that new Philadelphia Cooking Creme. I got some with a coupon last week and it was only 50 cents, so I thought I could probably whip up something easy with that. After reading a few of people's recipe suggestions, this is what I ended up making.

INGREDIENTS

2 large chicken breasts
12-16 oz box of pasta (I used a 16 oz but probably scooped about 4 oz out for my other brother Donnie, so I'm guessing a 12 oz box would be plenty)
2 cloves of garlic or 1 tsp of minced garlic
1 container of Philly Cooking Creme original
Italian Seasoning
1/2 a can of chicken stock
Salt Pepper Butter

METHOD
I started off by slicing the chicken breasts into strips, maybe 1/2 an inch thick or thinner, depending on how fast you want them to cook. I melted a tbsp or so of butter in a skillet, and then cooked the chicken strips over medium heat. I added salt and pepper, and turned them after about 5 minutes. I added salt and pepper to the other side and cooked until they were white in the middle. While the chicken is cooking bring a large pot of water to boil, and boil pasta according to directions on the box.

After the chicken is cooked, I moved it to the edges of the pan and added about another tbsp of butter to the middle. Once it melted I put the garlic in the middle and cooked for a few minutes. Then I poured about 1/4 of the can of chicken stock and stirred it all together, allowing the stock to come to a bubble. At this point I got worried it needed more flavor and threw a splash of white wine in there, but now that I've tasted it I think it would be good either way. Let it simmer, and add more stock if it cooks down too much.

When the pasta is done, drain. Add the chicken and stock mixture to the large pot you boiled the pasta in, add in the pasta and the entire container of cooking creme. Liberally sprinkle italian seasoning over the top, I didn't measure mine just eye balled it, but I'd guess it was a few teaspoons. When you stir it up there should be enough seasoning that there are flecks in every bite. Mix that all up. If its too thick you can pour a little stock in to thin it down. VOILA! You're all done, and your family will love it!

Mom and I love tomatoes so we spooned some diced tomatoes into our bowls since none of our boys like tomato chunks in things, but I liked it a lot! I think bell peppers would be a nice add in too, but those six ingredients hold up just fine on their own! Pretty affordable meal too!

I think this is a really good one for entertaining.It's so easy but your guests would never know it!
