Football Is HERE!

Well its pretty much fall..that means football, good weather, and some of my favorite foods! I love having Bama football on the television and a big pot of soup on the stove! I'm sure I'll do several soup recipes on here, but I decided to make this one today because it is so easy and yummy. When Lee lived in Auburn the year we were engaged, his roommate/cousin Adam would make this dish when the house was full of people watching football all weekend. It's pretty in expensive to make, and goes a long way. If it was enough to feed Lee and Adam and their other roommate plus a few girls, you know its filling!
I'm not usually a fan of tortilla soup, but this one tastes like all my favorite Mexican food but not too spicy.
Megan-you could make this b/c you don't really have to touch the chicken, its frozen when you take it out of the bag :) You could freeze your leftovers in individual containers for weeks you know you have lots of CCN stuff going on!

Adam's Tortilla Soup

1 small onion
2 cloves garlic
4 cups cooked chicken
31 oz can refried beans
2-14.5 oz cans petite diced tomatoes
14.5 oz can petite diced tomatoes w/ green chiles
14.5 oz chicken broth
1 can whole kernel corn

Ok so before I want to make it I just boil however much chicken I decide to use (I tend to try to stretch my meat, especially since this has recipe has so much beans in it). I take my straight from the freezer and boil it for 30-45 minutes. After its done, I take it out of the water and chop into small pieces. Sit the chicken aside.

Next, get out your favorite soup pot and put a little oil in the bottom of the pan. I use olive oil, but any veggie oil will work. Chop up 1 small onion, and cook it over medium heat for about 3 or 4 minutes. While that's cooking, chop up your two garlic cloves and throw it in with the onions for a a couple of minutes. Next add all the canned stuff, the broth, and the chicken. Stir all your ingredients together, and bring to a boil. Then, turn down to a simmer for 15 minutes. You're ready to eat!


I like to top mine with a LOT of sour cream and cheddar cheese. You could even put some fresh cilantro on it if you're feelin' fancy :)
